Mixed Vegetables Dry Curry

Last week we had shopped so much vegetables from the grocery, I had to finish off everything.So I decided to use some of them in 1 dish.

1 small cauliflower cut in small florets
1 carrot in small cubes
1 orange bell pepper in small cubes
1 small tomato cut in fours
1 teaspoon ginger
1/2 teaspoon cumin seeds

For Dry curry:
1 teaspoon coriander powder
1 teaspoon red chilli powder
1/2 teaspoon turmeric powder
Add these ingredients in a bowl and make a paste with 2 tablespoons water.

Heat the oil in a pan. Add the cumin seeds and let them splutter. Add the cauliflower florets and saute till it starts turning light brown at the edges. Add the carrot,bell pepper and ginger.Stir fry them till they become a bit tender. Add the tomato and saute till the pulp gets mixed with the rest of the vegetables. Add the dry curry paste.Mix thoroughly so that the vegetables get coated with it.Cover and let it cook for sometime.Before taking out of the stove check if the vegetables are cooked.Garnish with fresh coriander leaves.
