Sweet & Sour Salmon with Basil

Basil is one of my favourite ingredients. I tried last night's dinner with this recipe.

450 gms Salmon cut in 4 medium pieces
1 large onion cubed
1 yellow bell pepper cubed
1 tablespoon oil
1/2 tablespoon sweet chilli sauce
1/2 tablespoon oyster sauce
1 teaspoon fish sauce
For marination and gravy paste:
10 peppercorns
3 cloves garlic
1/2 inch ginger
3 basil leaves
1 teaspoon lime juice
Grind these ingredients and make a paste. Rub half of the paste on the fish and keep it for half n hour.
Heat 1/2 tablespoon oil in a non-stick pan. Add the fish pieces and fry till they become golden brown. Keep them aside.Add rest of the oil and fry the onions and bell pepper till they are tender. Add the gravy paste and salt and fry till everything is browned. Add the mixed sauce and add the fried fish. Cover and keep for 2-3 minutes on low flame. Take out of stove and serve hot.
