Eggplant & Sweet Potato Curry

This recipe is quite uncommon and experimental.

1 eggplant cut in small cubes
1 large sweet potato cut in small cubes
1 onion sliced
1 tomato cubed
1/4th cup chopped parsley
1 teaspoon minced garlic & ginger
3-4 green chilli peppers slit
1/2 teaspoon fennel seeds
1/2 teaspoon cumin powder
1/2 teaspoon coriander powder
1/2 teaspoon turmeric powder
2 tablespoon oil

Heat 1 tablespoon oil in a pan and saute the eggplant cubes till they become tender. Keep them aside. Add the remaining oil to the pan and add the fennel seeds to that. Wait till they splutter and add the onions.Saute till they become translucent. Add the minced ginger-garlic and chilli peppers.Saute till they start turning brown. Then add the sweet potato and tomato cubes.Stir fry them. Once they start to get cooked, add the cumin powder,coriander powder,turmeric powder and salt.Add a cup of water and mix all the ingredients thoroughly so that the vegetables get coated with the spices.Cover and let the sweet potatoes get tender. Add the eggplant and stir till all the water evaporates.Garnish with chopped parsley and serve hot.
