Spicy Egg Curry

This kind of curry is commonly known as "Kalia" in the West Bengal province of India and it is one of my mother's specialities.

4 eggs boiled and shelled
2 onions sliced
1 teaspoon ginger-garlic paste
1 tomato cubed
3 pods cardamom
1 inch cinnamon stick
3 cloves
2 tablespoon butter/oil

For the gravy:
2 tablespoon yogurt
1 teaspoon chilli powder
1 teaspoon coriander powder
1 teaspoon cumin powder
1/2 teaspoon garam masala powder(powdered cardamom+cinnamon+cloves)
1 teaspoon turmeric powder
In a bowl mix all the ingredients to form a thick paste.

Rub the boiled and shelled eggs with a pinch of salt and turmeric powder each. Then heat 1 tablespoon oil/butter in a non-stick pan. Saute the eggs till they turn light brown on all the sides.Keep them aside. Add the remaining butter to the pan and add the onions.Saute till they beocme tender. Add the ginger-garlic paste.Saute till they become brown.Add the tomato. Saute till the oil seperates. Add the yogurt mix with 1/2 cup water. Mix thoroughly.Add the eggs.Cover and let keep it for a minute or 2.Once it has become a thick,rich gravy, take away from heat and serve hot.
