500 gms Chicken cut in medium sized pieces
2 onions chopped
1 tablespoon ginger-garlic paste
1 tomato cubed
1 tablespoon butter
1/2 teaspoon sugar
1/2 teaspoon Rosewater
3 green cardamom pods
2 inches cinnamon stick
2 strips of mace
Grind these spices together to make a coarse powder.
For the chicken:
1/2 teaspoon of the powdered spices
1 teaspoon ginger-garlic paste
1 teaspoon Lime juice
Rub the chicken with these ingredients and keep for an hour.Then grease a pan with butter.Cook the chicken on low heat.Wait till it becomes brown on all sides and tender enough.It may take some time.You have to check and turn the pieces so that all the sides are roasted to perfection.This step can be done in an oven to save time.Keep the chicken aside when done.
Heat butter in a pan.Add 1 teaspoon spiced powder and wait till they splutter.Add the ginger-garlic paste and onions.Saute till they become translucent.Add the tomato.Saute for sometimes.Add 1 cup water,salt and sugar.Mix well.Then cover and cook on medium flame.When it forms a semi-thick gravy,add the Rosewater and remove from heat.Pour over the roasted chicken pieces.
