Sweet Potato Masala with Peas

Ingredients:
1 large Sweet Potato diced
1 onion sliced
1 tomato chopped
1/2 cup peas
1 tablespoon minced ginger-garlic
1 inch cinnamon stick
2 cubes of Maggi Masala Cubes mixed with warm water to form a curry paste
2 tablespoons oil
Salt

Spice Mix:
1 teaspoon coriander seeds
1 teaspoon cumin seeds
3 pods of cardamom
1 teaspoon red chilli powder
1/2 teaspoon turmeric powder
Dry roast the first 3 ingredients and grind them to make an aromatic powder.Add the red chilli powder and turmeric powder to the powdered spice.

Heat 1 tablespoon oil in a pan.Saute the sweet potato till the corners start browning.Remove them aside.Add the rest of the oil in the same pan and add the cinnamon.When it starts to splutter add the onions and saute for sometimes.Add the minced ginger-garlic and tomato.Saute till everything turns golden brown.Add the green peas and powdered spice mix and saute for sometimes.Then add the curry paste with 1/2 cup water and salt.Add the sweet potato.Cover and cook for sometimes till the potato becomes tender and the water evaporates.


P.S.This dish can be prepared with normal potato also.
