Mixed Vegetable Masala

Ingredients:
1 cauliflower cut into medium sized florets
2 carrots cut into i inch long pieces
2 potatoes cubed
1/2 cup green peas
1 onion sliced
1 tomato cubed
1 teaspoon ginger paste
2 pods green cardamoms
1 inch stick cinnamon
1/2 teaspoon coriander seeds
1/2 teaspoon cumin powder
1/2 teaspoon turmeric powder
1 teaspoon red chilli powder
1 tablespoon oil
Salt

Heat oil in a pan.Add the cardamoms,cinnamon and coriander seeds.When they star to splutter,add the onions,ginger and tomato.Saute till they turn brown.Add all the vegetables and saute till the oil seperates.Add the cumin powder,turmeric powder,salt and chili powder with 1/4th cup water.Mix well and cover cook till all the vegetables are tender.Keep checking in between.If necessary add water.When the vegetables are cooked thoroughly,remove the cover and wait till all the water evaporates.Serve hot.
