Mixed Vegetables with Cream

Ingredients:
2 Carrots cut in 2 inches pieces
1/2 Cauliflower made into medium florets
2 potatoes cut in round thick slices
1/4th cup Peas
1 onion sliced
1/4 teaspoon Mustard seeds
1/4 teaspoon Onion seeds
1/4 teaspoon Fenugreek seeds
1/4 cup Light Cream
2 tablespoons oil
Salt

The Spice:
2 tablespoons tomato puree
1 tablespoon ginger-garlic paste
1 teaspoon coriander powder
1 teaspoon chili powder
1 teaspoon Lime juice
Mix these ingredients in a bowl.

Heat oil in a pan.Saute the Cauliflower for 2 minutes and keep them aside.Add the remaining oil and add the mustard,onion and fenugreek seeds.When they start to splutter, add the onions and saute till it becomes brown.Add the Potato,carrots and peas along with the mixed spice and salt.Saute for sometimes till the oil seperates.Add 1/2 cup water.Cover and cook till the vegetables are cooked.Keep checking in between so that it does not get stuck to the pan.If needed add some water.When the vegetables are cooked,add the light cream and mix well with the vegetables.Garnish with chopped cilantro.
