Paneer Tikha Masala

Paneer 500 gms cut into 1 inch cubes & soaked in salt water
2 onions grated
1 tablespoon ginger-garlic paste
2 tomatoes chopped

Mixed Spices:
1 tablespoon coriander powder
1/2 tablespoon garam masala powder
1/2 tablespoon tandoori masala powder
1/2 tablespoon Kashmiri chili powder
1/2 teaspoon turmeric powder
1/2 teaspoon Fenugreek leaves
mix all these ingredients in a bowl with 1/4th cup of water to form a paste.

2 tablespoons melon seeds paste
2 tablespoons oil

For Tempering:
3 cloves
3 pods cardamom
1/2 inch cinnamon stick
1 teaspoon cumin seeds
1/2 teaspoon fennel seeds
3 green chillies roughly chopped

Heat the oil in a pan. Add the ingredients for tempering. When they start to crackle add the onion paste and ginger-garlic paste. Fry till it starts to turn reddish. Add the chopped tomatoes and fry well until the onion is almost cooked. Add the mixed spices paste and sauté till it gives out oil. Add the melon seeds paste and salt and sauté with some water.  Once it starts to get blended with the existing gravy, add the paneer cubes and 1/4th cup water. Let it cook for a while till you get the type of gravy you want. Serve with paratha.

P.S. It is a quite spicy and hot preparation.
