Cheesy Chicken Cutlets Recipe

I was tired of making the same kind of roasts and steaks at home. So I came up with this very easy cutlets for supper.

700 gms boneless chicken breast
200 gms bread crumbs
1/2 cup Cheese(I used Cheddar & Mozarella)
1/2 cup mayonnaise
1/4th cup milk
2 tablespoon Thyme (fresh or dried)
2 crushed garlic pods
Salt & pepper 
1 & 1/2 teaspoon olive oil

Cut the chicken breast into equal rectangular pieces. Taking something heavy like hammer hit on top to flatten the pieces. I used a pestle. In a bowl add the bread crmubs, shredded cheese,olive oil & salt/pepper. Then lightly mix it up. In another separate bowl add the milk, mayonnaise,crushed garlic, thyme, salt & pepper and blend with a hand blender. Place a silver foil on the oven tray & place a grill top. Coat it with a little olive oil. Soak the chicken pieces in the mayonnaise dip & coat them with the breadcrumbs & cheese mix and place on the grill top. Preheat the oven. Then place it inside and let it cook for 35 minutes at 200° C. Take it out and if you feel it requires a bit more cooking turn the pieces and recook it for 5-8 minutes. Serve it with mashed potatoes and boiled veggies.
